This wine arises from the need to vinify apart from the grapes produced by the most recent vineyards that over time have become adult and resourceful vineyards. We identified the hill corresponding to our needs to have a lean, agile wine with a ready drink and that would characterize the original vine as much as possible. Today it is vinified using mainly the grapes from the vineyard south of our cellar.
It presents great harmony and balance, highlighting a fascinating refined and mysterious aromatic vein. Warm and intriguing, excellent both as an aperitif and for the entire meal. Its scent opens up to recognitions of violet and rose, hay and vanilla. It is warm on the palate and with a long aromatic persistence. It can be drunk vintage or even aged.
VINIFICATION AND AGING
Soft destemming and crushing of grapes with low sulfur dioxide content. Fermentation in contact with the skins for 1 or days, at a temperature of 28-30° C, with daily folate. Malolactic fermentation, in stainless steel tanks.
