Doppio Passo Primitivo is a red wine from the Puglia region of southern Italy, made from the Primitivo grape. The name ”Doppio Passo” means ”double step” in Italian and refers to a unique winemaking process used to create this wine.
During the winemaking process, a portion of the grapes are harvested early and then allowed to dry on straw mats for several weeks. This concentrates the flavors and sugars in the grapes, resulting in a wine that is rich and full-bodied. The remaining grapes are harvested later and fermented as normal.
After fermentation, the wines are blended and undergo a second fermentation, hence the name ”Doppio Passo.” This process creates a wine that is both fruity and complex, with flavors of dark berries, cherries, and a hint of spice.
Doppio Passo Primitivo is a versatile wine that can be enjoyed on its own or paired with a variety of dishes, including grilled meats, pasta dishes, and aged cheeses.
