VINEYARDS
The vineyards are located in different sectors of Central Chile, with most of the grapes coming from the Colchagua Valley. However, we have also incorporated very exciting fractions of grapes from the Cachapoal and Maule Valleys. Although the soils in Central Chile are broadly similar, the Colchagua Valley stands out because of its granite-derived soils at different weathering levels. It also features
areas with strong colluvial and alluvial influences, which produce wine of enormous concentration and aromas, allowing us to keep our hallmark ripeness and full body. On the other hand, Cachapoal and Maule, which are also transverse valleys, mainly differ from Colchagua in their climatic characteristics, with Colchagua being slightly cooler in summer. In these valleys, we harvest a little earlier due to the faster ripening of the skins and seeds of the grapes, which results in fruit of great elegance and delicious perfume. In all valleys, the grapes are traditionally trellised to the vertical shoot position (with yields that do not exceed 12 tons/ha) and drip irrigated, which allows more efficient and sustainable use of water.
Food Pairing:Highly recommended with braised beef with french fries, steak and eggs, paella, cannelloni, and lasagna.
