The wine is a single-varietal Sauvignon Blanc from vines planted in 2010 at Caudiès-de-Fenouillèdes in an organically farmed vineyard characterised by clay, limestone and some slate. After the hand harvest – the yield was around 30 hl/ha – the whole grapes were fermented spontaneously on the skins for 15 days. Afterwards, the wine was pressed and matured in concrete for a few months. It was bottled without fining and filtration, only with some filling sulphur.
Color
light copper coloured, clearly less cloudy than last year
Nose
The Orange is a mash-fermented white wine that smells discreetly of crumbly apples with their skins, pure clover, broom, hay and yeast. Even though it was fermented and aged in concrete, it reminds one a little of amphorae. With warmth, notes of acacia blossom and honey are added.
